You could try submitting an official enrollment verification letter from your university, preferably on school letterhead and showing your current enrollment/status and a date. GitHub also lists a current school ID, class schedule, transcript, or affiliation/enrollment verification letter as acceptable proof.

Since your documents are electronic, if the application only lets you use the camera, you could display the official document on another screen and capture it clearly, making sure the relevant information and date are visible.

If that still doesn't work, I'd recommend contacting GitHub Education Support and explaining that your university is fully online and doesn't provide the documents in another format.
